Omelets are one of the few breakfasts that incorporate vegetables easily. Whether at home or at a diner, you can enjoy a veggie omelet that’s highly nutritious and – and that helps you meet your daily recommended servings before lunch.
Among the vegetables that work well in omelets are tomatoes, broccoli, mushrooms, spinach, sweet peppers, hot peppers, onions, potatoes…you name it.
If you’re concerned about fat content, consider making an egg-white omelet (no yolks). Instead of folding in lots of cheese, eliminate it completely or use just a small amount of a strong-flavored cheese. And don’t use butter in your frying pan. Either coat the pan with a non-stick spray or use a tiny bit of olive oil.
